Origin: Nishio, Japan
Ingredients: 100% green tea, stone ground

Matcha tea is produced from a fine Japanese green tea, which is shaded 4 weeks before the harvest to prevent direct sunlight The tea plant compensates for the loss of light by increasing chlorophyll content in its leaves. When tea leaves are rolled out to dry it is to produce gyokuro tea, however, when the leaves are laid flat to dry, they produce tencha. Tencha can then be de-veined and de-stemmed on its way to becoming matcha. The tea is then slowly ground, using granite grinding wheels, to a fine powder. Production can be a time consuming task, as it can take up to one hour to produce just 30 grams! Consumers who want quality focus on Japanese matcha, as stone grinding tea is truly an art form in itself. Tea produced outside of Japan can often become burnt, degrading the quality of tea produced. Also production in China or Vietnam use a different tea leaf from the Japanese tea leaf and it just cannot compare to the traditional Japanese product. It is a truly "eating the whole leaf" experience, whereas you are consuming a higher concentration of antioxidants, L'theanine, vitamins, minerals and fibers. Matcha tea can be enjoyed in many ways: It is a great addition to ice cream, smoothies, shakes, cake, short bread cookies, etc…. or you can simply whisk a small amount, approximately 2 grams with a few ounces of hot water and enjoy. Its history in Japan began more than 800 years ago when powdered tea was imported from China and used as a tribute item for the Japanese court and nobility. It was first used in Buddhist monasteries, after being brought back by a Japanese monk returning from China. This monk, Eisai, also brought back seeds from China which produced top quality tea. While China still remains at the foreground of the tea producing world, Japan leads the way with regards to matcha tea production. It is an art form to produce matcha of the grade which originates from Japan, an art form that has not been successfully repeated elsewhere to this day. This tea is incredibly healthy for you, as it is stacked with antioxidants. An Oxygen Radical Absorption Capacity (ORAC) test was developed by the USDA and Tufts to assess the antioxidant potency of foods and beverages. One gram of matcha tea was found to contain 1384 ORAC units, compared for instance to pomegranate with 105 and goji berries with 253 ORAC units.
